The extraction speed will depend on a few factors: CPU power, as it will need to perform the decompression algorithm.

Hard drive performance. Obviously an SSD or NVMe drive will be quicker than a traditional spinning drive. However it will also be slower if you just have a single drive, as you'll be reading and writing to the same drive. It should be a lot quicker if you have the 7z files on one drive and extract to another drive.

There are a lot of small files in RetroBat and these can make the extraction slow down. When the process reaches larger files it should speed up.
